So….if you’re like my wife you might not be tired of just rehashing the same plate of Thanksgiving fare for lunch and dinner for the next week and a half. BUT, if you are looking to replate that delicious bird in a fun and different way….maybe this is for you.
Tear up (yes, by hand) your favorite pieces of your turkey into strips about 2 inches long. Add to that a couple spoonfulls of your stuffing (mine was a cornbread stuffing). Place into bowl and heat for about a minute in the microwave.
While your turkey and stuffing are reheating - cover the bottom of a large saute pan with vegetable or canola oil and place over medium heat. When hot place your corn tortillas in the pan (be careful) and have your tongs at the ready! I like mine crispy, so I might do 20-30 seconds on each side. When the edges get slighty browned….take them out and place on paper towels to degrease. Lightly salt the tortillas on both sides.
Take your bird and stuffing and place in the middle of your tortilla. Don’t shy away from this next step. It is possibly THE KEY to making this the yummiest rerun (leftover) you will ever sink your teeth into. Take your cranberry sauce (my sister made one from scratch….which is preferable….but canned would work to!) and place a dollop of that on top of your turkey and stuffing.
Fold up and eat!
